This is Pinot Grigio—but think of it as Pinot Gris.

It’s the same noble clone grown in Alsace or known as Grauburgunder in Germany. Forget the simple, thin versions you might expect; this is the grape in its fullest expression. Grown at 400 meters in one of Oltrepò Pavese’s top crus, where warm valley air meets the cool Apennine winds, Elivià shows what this variety is truly capable of. It has depth, character, and a serious structure that makes it a real gastronomic wine.

The color is a deep straw yellow with a copper tint—the look alone tells you this is different. The nose opens with yellow stone fruits, exotic notes, and white flowers. On the palate, it is full and rich, but a lively acidity keeps everything fresh. It has weight and perfect balance. It is a generous wine that stays elegant on the finish.

Pierluigi's note: This is the bottle I grab when the food pairing needs the structure of a red, but I want to drink white. It’s my go-to for grilled shellfish, cured meats like prosciutto, or aged cheeses. It is incredible with risotto or creamy pasta, and it specifically shines with pumpkin-based recipes. Serve it at 10–13°C.

Le Fiole is the story of two sisters, Silvia and Elisa, who chose to reconnect with their roots in Oltrepò Pavese. Their grandfather Guglielmo and father Enzo both dedicated their lives to the vines, growing grapes with love and patience on the rolling hills of Montalto Pavese.

The spark came one summer day in 2016, when Silvia and Elisa discovered an old chest in their grandfather’s farmhouse. Inside were bottles of wine carefully kept from the years of their births — a sign of the deep bond between family, land, and wine. From that moment, they knew they wanted to continue this tradition in their own way.

Today, they call themselves the female side of Oltrepò Pavese. With their Pinot Noir and Pinot Grigio, they aim to elevate local grapes with elegance and personality, blending family heritage with a modern vision. Every bottle of Le Fiole is both a tribute to their roots and an invitation to experience the unique character of Oltrepò Pavese.

Oltrepò Pavese is one of Italy’s best-kept secrets. Tucked away in the hills south of Milan, it’s a landscape of rolling vineyards, tiny villages, and winding valleys. This is Pinot Noir country — in fact, the area sits on the same latitude as Burgundy and Oregon, two of the world’s most famous Pinot regions.

Here, the days are warm, the nights are cool, and the soils are a mix of limestone and clay. That combination gives the wines freshness, elegance, and depth — exactly what Pinot Noir needs to shine. It’s no wonder Oltrepò is often called the “Burgundy of Italy.”
