Artichokes preserved in oil are one of the great symbols of Puglian peasant cooking — simple ingredients, careful hands and a recipe that hasn't changed in generations. These are picked from the estate fields, cleaned and preserved in Antica Enotria's own Coratina extra virgin olive oil with vinegar, salt and lemon. The artichoke keeps its crunch and its character. Nothing is lost.

Everything happens within the walls of the historic Masseria Contessa Staffa, where they transform vegetables and grapes grown exclusively in their own fields.
