This drink hails from the Dolomite mountains in Trentino. Instead of grapes, the base is white beet, which fermentation transforms into a crisp, dry liquid with a mineral backbone. Aromatic hops provide a floral, citrusy nose, while Szechuan pepper delivers a peppery kick and an "electric" tingle on the tongue.
