Another creation from the wild Italian Dolomites, Feral N°2 swaps the vine for white beet. Through lactic fermentation, the beet’s raw earthiness is transformed into a sophisticated, structured body. It is a bold, mountain-crafted liquid that respects the landscape while carving out its own category.

The profile is spicy and warm. Fresh ginger provides a bright, immediate heat, while allspice adds a layer of complexity—think hints of clove and dark peppercorn. It is a vibrant orange liquid with a persistent, spicy grip and a remarkably clean finish.

Pierluigi’s Note: The ginger provides a warming bite that gives this real presence in the glass. It is a serious match for spicy and umami dishes, roasted root vegetables, or even dark chocolate. Serve at 10–12°C.
